Hey guys! I’m feeling contemplative today. So I took some photos of my garden – this is the view I get to look out at on the daily. And the best part is, best viagra cure I don’t have to do any of the gardening! I’m a tenant to this beautiful garden. I guess I’m feeling a little more thoughtful today because my birthday is fast approaching. I’m turning 30 in less than a week! Ah!!! And I thought 30 would look different on me. I thought I’d magically have my shit together at this point in time. Still, tadalafil search I feel entirely blessed and happy with who I’ve become.

Anyway, health enough of the sappy stuff. In celebration of ME, I made one of my favourite recipes last night – Chicken Tortilla Soup. My birthday is on Cinco de Mayo – thus my infinity for Mexican food. So I usually eat tacos for my birthday dinner. Duh! And in preparation for my big day, I’m eating Mexican food the entire week. This soup recipe is great for the transitional (Rain. Sun. Rain. Sun.) weather we’ve been having lately – its spicy, hearty, cheesy and all-in-all delicious.

Ingredients:

  • 4 c. Chicken Broth
  • 1 can Diced Tomatoes
  • 2 Tbsp. Olive Oil
  • 1 Yellow Onion
  • 2 Cloves of Garlic
  • 1 Red Pepper
  • 1/2 Jalapeno Pepper
  • 1 tsp. Cumin
  • 1 tsp. Chili Powder
  • 1 tsp. Sugar
  • 1 Lime
  • Salt and Pepper to taste

Toppings:

  • Cilantro
  • Avocado
  • Cooked Shredded Chicken
  • Cheddar Cheese
  • Tortilla Chips
  • Sour Cream
  • Hot Sauce

Directions:

1. Dice your veggies. Heat olive oil over medium heat. Add onions and stir-fry until translucent. And garlic, jalapeno and red pepper. Cook until pepper is tender.

2. Still in cumin and chili powder and stir for about 30 seconds.

3. Add tomatoes and broth and bring to a boil. Lower heat, cover and let simmer for 20-30 minutes.

4. Remove from heat and blend with an immersion blender until smooth. Add sugar, salt and pepper and lime juice. Return to heat until sugar is dissolved.

5. Add toppings (don’t be stingy) and stuff your face!

Yum, yum, yum! I made this soup last night and my kitchen had pretty dingy lighting – so the pictures don’t do it justice. This soup has great texture – the cheese melts, the chips get saturated and the avocado has a great fresh crunch. I love this soup – seriously. Think about serving this one in honour of me at your Cinco de Mayo party, ok?

    Soppa de Tortilla has been my personal barometer for quality of food in Mexican restaurants for years.
    To this date, I found the best at Caballeros restaurant in a little village of Cabo Pulmo.
    Their secret: guajillo pepper !
