It’s donut time again! Recently my husband turned 30, generic viagra health and I threw him a surprise party to celebrate. I made it a ‘Dessert Party’ so everyone came with some sort of treat – so muchhhh sugar, but so fun. I decided I wanted to make my earl grey donuts that I shared with all of you earlier this year. Well. I didn’t grease the pan enough – and all my donuts crumpled while I was trying to get them out of the pan to cool. SAD. Since that whole experience turned into a pretty big fail I wanted/needed to make donuts again to prove to myself that I hadn’t made a terrible recipe and that the crumply pile of donuts was just a one time thing. BTW…I ended up making a donut pile which I titled the ‘Party Pile’ and poured all of my icing over the pile. It was still devoured and tasted great, just not as pretty as I had hoped :(

So here is me saying to myself – self, that was just a one time thing. You are good at making donuts, and you can now carry on with your life knowing in your heart that donuts and you are a-ok. Phewf.

I’ve come up with these delicious Chai Baked Donuts, and they worked out! Let’s get to making them, shall we?

I buy a lot of my tea at an adorable tea shop in Vancouver called La Petite Cuillere. They serve a pretty big amount of tea which they blend themselves, and you can purchase it to have at home or stay at the shop and have a tea party full of all the treats that accompany high tea if you’re feeling fancy. So sweet! I used their chai house blend for this recipe.

Chai Baked Donuts  makes 12 donuts 

Ingredients

1 1/4 cups flour

3/4 cup coconut sugar

1/2 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon loose leaf Chai tea blend – ground in a food processor (or blender)

2/3 cup vegetable oil (it has the least amount of flavour, feel free to use a different oil )

1/2 cup buttermilk

1 egg

1/2 teaspoon white vinegar

1/2 teaspoon vanilla extract

Directions

Pre-heat your oven to 350º. Pour your looseleaf tea into your food processor or blender (or mortar and pestle) until it is a bit more broken down than it’s original form. You’ll want to do this part so that you aren’t having to chew through the tea bits. Once the tea is ready, pour all your dry ingredients into one bowl and mix. Then pour all your wet ingredients into another bowl and mix. Then pour the dry ingredients into the wet ingredients bowl and mix everything together until just combined. Fill your well-greased donut pans with about 2/3 of batter in each donut ‘hole’. Then bake for 12-14 minutes. Once they have been baked let them cool on a wire rack before dipping.

For the Icing

2 cups of confectioners sugar

1/2 teaspoon vanilla extract

1/4 cup milk (I used vanilla almond milk – unsweetened)

2 teaspoons of loose leaf chai tea blend

1-2 teaspoons of pumpkin spice blend + some for sprinkling on top, once dipped

Directions

In a small pot over medium heat, allow the almond milk and the looseleaf tea to come to a gentle boil. Once it has started to boil, turn off the heat and ‘steep’ the tea with the lid covering it for 5-10 minutes. The longer you let it steep the more flavourful your icing will be. Once the milk has steeped to your liking, pour it over a strainer into a wide and shallow(ish) bowl. Pour in the confectioners sugar, vanilla and pumpkin spice in with the milk, and stir until it is smooth and no lumps are left. Then dip your cooled donuts into the icing, transferring them to parchment paper, and finish by sprinkling some pumpkin spice to decorate.

Yum! You guys should make these delicious Chai Baked Donuts for your next brunch get-together. The perfect amount of chai flavour makes these donuts my new party favourite. Similar to my Cream of Earl Grey donuts but with a spicy twist! And if you’d rather make a straight up pumpkin spiced donut, check out my recipe here.

Now I need to have another party so that I don’t have a bunch of donuts sitting around waiting to be gobbled up. But if we are going to be honest with each other, these donuts don’t need nooo party to be eaten. Can you say, donut party for one!?
