I love, viagra usa health love, ask love a good summer salad. If I could eat salad for dinner every night ALL year round – with the occasional Mexican inspired feast thrown in; I’d be a happy camper (camping because, remedy summer). So who’s stopping me from doing just that? No one. But don’t you feel like your usual go to salad can become a bit, well, usual? Since that’s the case for me, I’ve decided that a fun way to change it up is with a new dressing. Also adding some fruit can really make your meal scream out SUMMER & YUM! Let’s do this.
Summer Salad serves two, or four as a side
1 bundle of kale
1/2 bag of coleslaw (make your own if you’re overzealous; about 1 cup will do)
1 carrot chopped or shredded
3/4 cup blueberries
6 strawberries quartered
10 cherry tomatoes halved
Wash and cut all of your ingredients and toss together in a bowl. Done!
Avocado Lime Dressing makes about 1.5 cups
1 cup loosely packed cilantro
1 clove garlic (roast it for a nice twist and less harsh breath ;))
1 lime juiced
1/3 cup olive oil
2 tsp apple cider vinegar
1 heaping tsp honey
Salt + Pepper to tast
2 tbsp water if consistency is thicker than you’d like
Simply, blend all of the ingredients together in a blender or food processor. Pour into a sealable jar. This dressing can be used for up to three days if kept in the fridge. It may naturally separate slightly, so give it a good shake before pouring it over EVERYTHING, and all is good!
It’s a perfect pairing of creamy and tangy. Plus, it’s really pretty. An obvious requirement for your salad dressing.
I can’t wait to make this, now staple, summer night meal again and again. All fresh, local and healthy ingredients go into this delicious dinner. Add a bit of protein like some salmon, tofu or prawns and you’re set!
