Yay Breakfast! It’s my favourite meal. I especially love having breakfast for dinner. This omelette would be perfect for an evening breakfast as it’s simple, viagra buy sales delicious and only a few ingredients; perfect for an after work meal OR for a regular morning meal OR for a lunch. I mean, cialis it’s just so versatile. My sister made this for me a few weeks ago when I was over visiting with her and her littles and it was so good I had to get the recipe and share it with you! I know, I know, I am such a good friend ;)
Pesto and Avocado Omelette makes one omelette
1-2 tbsp milk
1-2tbsp goat cheese
salt and pepper to taste
small amount of olive oil
Pre-heat your frying pan with a little bit of olive oil on medium heat. While that’s heating whip together your two eggs with the salt and pepper and milk. Pour into the heated pan. Try to smooth the egg mixture out into a circle. Then add all of your diced avocado and goat cheese onto one side of the circle. Using a spatula, add the pesto onto the other side of the circle. After a few minutes use a flipping utensil and fold one half over the other half. It should be a nice golden brown by the time you fold it. Flip the folded omelette onto the other side once more for good measure and let it brown up evenly. Then slide it onto your plate and enjoy this delicious and creamy meal!
Obviously have it with coffee. Whether you make this in the morning or evening, coffee is always a good decision.
I added some dill on top and it was a nice addition but not necessary. The omelette itself has enough flavour and creaminess that it needs nothing else!
This is seriously the tastiest omelette I’ve had in a long time. Since the fall weather is quickly approaching us around these parts, this meal is a great way to celebrate the days of staying inside snuggling up on the couch and eating something healthful but oh so tasty.
