Greatest Chocolate Cookies Ever

But like everyone and everything, I have grown since then and realized that I simply can’t hide this kind of gloriousness from the world. You all must know – these are the greatest cookies, ever. 1 cup butter – softened

3/4 cup packed brown sugar

1/2 cup coconut sugar

2 eggs

1 tsp vanilla

1 cup all-purpose flourΒ orΒ whole-wheat flourΒ orΒ gluten-free flour

1/2 cup cocoa powder (unsweetened)

1 tsp baking soda

1 tsp salt

1 cup oat bran

1 1/2 cups quick cooking oats

1 cup white chocolate chips


First – pre-heat your oven to 350 degrees. Then in a large bowl, mix together the softened butter, both sugars, eggs and vanilla. In a separate bowl, combine the flour, cocoa powder, baking soda and salt. Slowly mix the dry ingredients to the wet ingredients until it is smooth(ish). Once you’ve made your batter – mix in the oat bran, oats, and the white chocolate chips. Stir to combine. With a baking sheet lined with parchment paper (un-greased) scoop heaping tablespoons of the batter onto the sheet. The cookies don’t spread too much, so don’t worry about any spacing issues. Bake for 9-12 minutes. Then let cool on the sheet for a minute or two, until finally moving the cookies to a cooling rack to completely cool. Eat right away – or if you can resist finishing them all, they can be stored in an airtight container (once completely cooled) for a few days or in the fridge for up to a week. They won’t last that long though, because as you know, they are the greatest chocolate cookies ever.





This ended up being the second batch I made this weekend. For the first batch, I was so excited to make these cookies, since I haven’t been able to bake anything for about a year, that I didn’t take any photos, and we ate them so quickly there was nothing to share with all of you. So a second batch was needed (obvi) and I was able to get pictures. But there are still no cookies left. They didn’t make it through the weekend. Oh well. I didn’t even try to save them. What’s the point, right? Eat em’ up I say!

    I love your blog. The pictures you post really complement and make the reading exciting! I’m making cookies today and although I don’t have white chocolate chips, I hope they will still measure up.
